For all you burger junkies out there, there is no need to get discouraged if the rain clouds appear or there's three feet of snow covering your grill. We have you covered. Burgers can and should be cooked, eaten and dreamed about no matter what the weather brings. Cooking burgers at home, in your kitchen, and on a frying pan is something you should be doing all the time. Here's what you need to know:
BUY THE RIGHT THE BEEF
You want to buy good meat. That's the key. Fresh ground is great if you have a local butcher shop that you like. Make sure you have enough fat--that's where the flavor comes from. We suggest 80/20. That means 80% lean beef and 20% fat. Make sure the grind isn't too fine. A medium-size grind will give you that nice meaty texture you're looking for.
FORM THE PATTY
This is the fun part. Take your meat and form it into a ball. Put it in the palm of your hand and press it in the middle. Now work your way around the outside to make that nice even disc to throw in the pan. Don't work the meat too hard. You want it firm enough that it doesn't fall apart, but not too firm. When the patty is formed, use your thumbs to press a dimple right in the middle. This will help your patty to keep its shape and prevent it from puffing up during the cooking.
This is important! Liberally season both sides of your patty. Kosher salt and fresh cracked pepper is an easy option. If you want to get crazy, take a few minutes and make a burger rub. The right burger rub will take your burger to the next level.
Get out the frying pan. Non-stick is nice but not a necessity. Put the stove on medium-high and get the pan nice and hot. Test it with a few drops of water. When the water sizzles you are ready to go. Add a teaspoon of olive oil and swirl it around to cover the bottom of the pan. When the oil is hot put in your patty. You should hear a sizzle when it hits the pan. Let the burger cook for 4 minutes without touching it. Now flip. Let it cook for another 2 minutes. Add your cheese, a couple drops of water and let it cook for another minute with a lid on the pan. This steam action will help the cheese melt just the way you like it.
Now take your burger, put it on a toasted and buttered bun or even toss it on top of a salad if you're scared of carbs. Just do it soon.
